A plugin called ExtractText has been added to the SpamAssassin section.
This highly configurable plugin uses plugin extractors or external tools to extract text from message parts (recursively if wanted).
Currently included are configs for PDF, RTF and MS Word and OpenDcoument files, and a very simplistic plugin for OpenXML.
